Salt and Pepper Tofu

Tofu gets a bad rep. Poor tofu.

Before I started dating my lovely vegan boyfriend, I did have my reservations about it. Then I learned to flavour and cook it properly, and my perceptions changed dramatically!

Here is a simple recipe for salt and pepper tofu that you can whip up for a stir fry, or make in advance for lunches.

  • 300g firm pressed tofu
  • 1 tsp chilli flakes*
  • 1 tsp black pepper
  • 1 tsp Salt
  • 1/2 tsp Cumin
  • 1-2 tbsp vegetable oil
*Real Sichuan salt and pepper recipes use Sichuan peppercorns, so this is definitely an 'inspired by' dish rather than anything authentic!

Cut the tofu into strips or cubes, then simply mix the spices and salt together and rub it onto the tofu pieces. Next, heat up the oil in a frying pan and fry the tofu on each side until it's crispy.

Alternatively, you can line a baking tray with parchment, lightly coat the tofu in oil and bake on a medium heat until both sides are crisp.
